Captain Crunch French Toast

Maybe I live under a rock, but I had never heard of this.  I was watching Drive-ins, Diners and Dives and a cafe in Baltimore makes this as one of their signature dishes.  I went to the store to get the ingredients and the cashier said "Oh that's my son's favorite, they make it at Boy Scouts"!
So if it is old news, doesn't matter because it is really good.  This is my version.

Serves 4:
2 Large eggs
1/2 cup heavy cream (half and half or whole milk will work)
1 tsp. vanilla extract
1 Tbsp. sugar

Whisk together in a flat bottom bowl or container.


4 slices texas toast
3 cups Captain Crunch cereal, crushed 



Dip a slice of Texas toast in egg batter, then turn over.  You do not need to let it soak.  Then press in Captain Crunch crumbs on both sides.  

Heat griddle or skillet to medium high.  Butter or spray with cooking spray (of course the butter is best).  Put bread slices on griddle and cook 2 or 3 minutes per side or until golden brown on each side.  

Serve with strawberries, whip cream (I used Redi Whip from a can) and a drizzle of syrup.  

One slice per person is enough.  Very rich and wonderful.
