Salted Caramel Chocolate Chip Cookies

You know I rarely make up my recipes.  I pull them from all over the place.  I try to give credit when I can.  But I just made this one up.  And they are really good!

Preheat oven to 350.

1/2 cup butter (1 stick) Land O Lakes preferrably
1/2 cup Crisco shortening (1/2 stick)

Cream together in a mixer fitted with a paddle.

Add:
3/4 cup sugar
3/4 cup brown sugar

Mix on low until combined.

Add:
2 large eggs
1 tsp. vanilla bean paste (or 2 tsp. vanilla extract)

Beat on medium just until combined.

Add:
2 cups flour
1 tsp. baking soda
1 tsp. kosher salt (this gives it the saltier taste, buy some if you don't have it. Don't substitute table salt)
2 cups Old Fashioned rolled oats

Mix on low until combined, scraping down bowl, 2 times.


In a food processor, pulse
1 - 3.5 oz bar Lindt Sea Salt Dark chocolate bar (found in the candy aisle not the baking aisle)

Add to cookie dough:
1 cup semi sweet chocolate chips
1 cup caramel bits

Mix on low until incorporated.

Using an ice cream scoop (2 inch across, about 1/8 a cup).  Place on parchment lined cookie sheet.

Bake 17 minutes at 350 degrees.
